Instructions
Heat the Coconut Milk:
In a small saucepan, heat the coconut milk over medium heat until it just begins to simmer. Be careful not to let it boil.
Combine with Chocolate:
Break the dark chocolate into small pieces, or if using chocolate chips, measure them and place them in a heatproof bowl. Pour the hot coconut milk over the chocolate. Allow it to sit for a minute to soften the chocolate.
Blend Together:
Using an immersion blender or a hand blender, blend the mixture until the chocolate is completely melted and the mixture is smooth and creamy.
Chill Overnight:
Transfer the chocolate mousse mixture into serving cups or a container. Cover with a lid and refrigerate overnight, or for at least 4 hours, until the mousse is firm and set.
Serve and Enjoy:
Once chilled, your two-ingredient chocolate mousse is ready to be enjoyed! Serve it in individual cups or glasses, and feel free to garnish with whipped coconut cream, fresh berries, or a sprinkle of cocoa powder for an extra touch of indulgence.
