- 1/3 cup avocado oilmelted coconut oil, or grass-fed butter
- 1/4 cup plus 2 tablespoons maple syrup
- 1 egg
- 2 teaspoons vanilla extract
- 1 3/4 cups almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dark chocolate chips
Instructions
Preheat the oven to 350 degrees.
In a large bowl, combine the first four ingredients.
Add the almond flour, baking soda, and salt; mix just until incorporated—avoid over-mixing.
Gently fold in the dark chocolate chips.
Chill the cookie dough in the fridge for 10 - 15 minutes.
Line a baking sheet with parchment paper.
Use a cookie scoop or large spoon to place rounds of cookie dough on the pan, leaving two inches between each (cookies will spread).
Optional: Bake for 7 min take out quickly and hit the pan gently on the counter (on a towel) to flatten, place back in the oven for 5 minutes or until golden.
Or bake for a total of 10-12 minutes until golden. Don’t over bake!
