These cookies are not only yummy but also boast a high protein content for a satisfying and nutritious treat.

Gluten Free Chocolate Chip Cookie Recipe

Ingredients
  

  • - 1/2 cup creamy almond butter
  • - 1/3 cup avocado oil melted coconut oil, or grass-fed butter
  • - 1/4 cup plus 2 tablespoons maple syrup
  • - 1 egg
  • - 2 teaspoons vanilla extract
  • - 1 3/4 cups almond flour
  • - 1/2 teaspoon baking soda
  • - 1/2 teaspoon salt
  • - 1 cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine the first four ingredients.
  • Add the almond flour, baking soda, and salt; mix just until incorporated—avoid over-mixing.
  • Gently fold in the dark chocolate chips.
  • Chill the cookie dough in the fridge for 10 - 15 minutes.
  • Line a baking sheet with parchment paper.
  • Use a cookie scoop or large spoon to place rounds of cookie dough on the pan, leaving two inches between each (cookies will spread).
  • Optional: Bake for 7 min take out quickly and hit the pan gently on the counter (on a towel) to flatten, place back in the oven for 5 minutes or until golden.
  • Or bake for a total of 10-12 minutes until golden. Don’t over bake!
