Healthy Spring Rolls

Healthy spring rolls are one of my favorite lunch or snack options. I make a big batch of them using leftover protein and veggies at the start of the week.

These healthy spring rolls are not only delicious, but also leave you feeling light and energized. They are such a great option if you are looking to have a snack or light lunch when you are short on time.

This spring roll recipe is the perfect combination of protein and vegetables that can help you stay satisfied between meals.

This spring roll recipe is so simple, they’re fun for kids too. Get them in the kitchen add in all of their favorite veggies and protein and roll them out together!

Ingredients
  

  • Rice paper wrappers
  • Leftover protein chicken, shrimp, tofu, etc.
  • Julienned vegetables carrots, cucumbers, bell peppers, lettuce, etc.

Instructions
 

  • Prepare your protein and vegetables by slicing them into thin strips.
  • Fill a shallow dish with warm water.
  • Dip one rice paper wrapper into the water for a few seconds until it softens.
  • Lay the softened wrapper flat on a clean surface.
  • Place a small portion of protein and vegetables in the center of the wrapper.
  • Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly.
  • Repeat with the remaining wrappers and filling ingredients.
