Miso Glazed Sweet Potatoes

Miso Glazed Sweet Potatoes

Ingredients
  

Sweet Potatoes

  • 2 tbsp Sweet Potatoes (Peeled + Cubed)
  • 2 tbsp avocado oil
  • celtic salt

Marinade

  • 2 tbsp miso (white or red)
  • 2 tbsp maple syrup
  • 2 tbsp coconut aminos
  • 2 tbsp rice vinegar
  • 1 tsp garlic powder
  • 1 crushed garlic (optional)
  • fresh pepper

Instructions
 

  • Preheat the oven to 400 degrees
  • Place diced sweet potatoes on a parchment lined baking sheet
  • Sprinkle celtic salt and fresh pepper evenly on sweet potatoes and mix around to coat
  • Place the sweet potatoes in the oven for 15 minutes to soften
  • To a bowl add the miso, maple syrup, rice vinegar, garlic powder and garlic (if using) and pepper
  • Once the sweet potatoes are done remove from the oven and add to the bowl
  • Mix gently and cover the marinade on the potatoes
  • Place back in the oven for 10-15 until caramelized on the outside - make sure they don't burn!
